The Two Timer, featuring Catoctin Creek

We wanted a cocktail using the savory notes of aquavit to play off of refreshing apple and celery flavors. We had collaborated with Catoctin Creek to produce a limited run of a cocktail we had featured in the past, a Cold Apple Toddy. We sent them a recipe, and they produced what is essentially a bottled cocktail: apples roasted in spices and sugar, which they blended with their Quarter Branch Apple Brandy and then aged in their apple brandy casks. The result is sweetly apply but light and delicate, with lots of clove and cinnamon notes.

We take the resulting Catoctin Creek Spiced Apple Toddy and blend it with aquavit, celery, brandy, and black walnut bitters to make an intense, spirit-forward cocktail that is bursting with savory and sweet spices, which are tempered by the green and refreshing notes of the apple and celery.

1.5 oz Linie Aquavit
0.5 oz Catoctin Creek 1757 Virginia Brandy
0.5 oz Celery-infused Catoctin Creek Spiced Apple Toddy
1 barspoon Rich Simple Syrup
2 droppers Bittermens Orchard St. Celery Shrub
6 drops Fee Bros Black Walnut Bitters

Stir all ingredients in a mixing glass over ice, strain over a large ice cube in a rocks glass.
Garnish with a celery leaf laid flat on the ice cube.

It’s boozey with a bitter bite that has a touch of sweetness which balances out to be the perfect evening beverage on a cool fall or summer night. Or any night for that matter. If you like classics such as the Manhattan, this should be right up your alley.

Almond Breeze, featuring Catoctin Creek

This drink came about because I knew I wanted to create a cocktail that kept some of the traditional flavors of tiki drinks, but used rye as the base spirit. I wanted to find a way to encourage people who wouldn’t normally have a whiskey drink to try something new.

1/2 ounce Allspice Dram
3/4 ounce lemon juice
1/2 ounce pineapple shrub
1/3 ounce orgeat syrup

Shake all ingredients and serve over ice in a rocks glass. Garnish with a lemon wheel.
