The Sassy Tomato, featuring A. Smith Bowman

Not at all what you would expect when thinking about a tomato cocktail. The Sassy Tomato is herbaceous, light, and has a nice spritz.

INGREDIENTS
Sassy Tomato:
1.5 oz Sunset Hills Gin
1.5 oz Tomato Shrub
.5 oz lemon Juice
Splash Soda Water
Anise Hyssop Sprig
Basil Sprig
Lemon Wheel

Tomato Shrub:
1 lb Tomatoes
1 lb Sugar
1/4-1/2 Cup Red Wine Vinegar
1 Stalk of Celery
A few Sprigs of Anise Hyssop
A few Sprigs of Basil
A few Sprigs of Cilantro Salt to Taste.

PREPARATION
In a shaker combine the gin, shrub, and lemon juice… add ice and shake till chilled. Splash the soda water in to the shaker and strain the entire contents over fresh ice in a high ball. Garnish with the fresh herbs and lemon wheel.
