This french summer inspired highball is a fantastic option on a balmy afternoon. The sweetness of the gin complement the tartness of the verjus and the briny-ness of the sherry. To round it out we add some cucumber juice to lend a floral and herbaceous hand.
1.5 oz Commonwealth Gin
0.75 oz Verjus
0.5 oz Fino Sherry
0.5 oz 1:1 Simple Syrup
0.75 oz Lemon Juice
0.5 oz Cucumber Juice
2 oz Sparkling Water Cucumber ribbon for garnish
Combine ingredients in highball or collins glass and fill with ice. Skewer cucumber ribbon and add a straw.
